The interplay of temperature and humidity
A tropical climate means high ambient temperatures with high levels of humidity – conditions under which food spoils extremely quickly. BioFresh technology was developed based on the fact that food stays fresh for longest when stored at a temperature just above freezing point. The BioFresh drawers therefore offer a carefully maintained temperature of just above 0 °C, which is far lower than a normal refrigerator compartment temperature.
However, an optimum temperature alone is not enough to preserve freshness: fruits and vegetables also require moisture to remain crisp, whereas cheese and dried fruits keep best when stored in dry conditions. To take account of this, the humidity in the BioFresh drawers can be adjusted using a slider control to create either a HydroSafe or a DrySafe. The drawers act as freshness safes, which can be set as desired. BioFresh transforms refrigerators into versatile storage spaces, in which the widest range of foods can be stored under ideal conditions.
Multiple climate zones in one appliance
If the BioFresh-Safe is set to HydroSafe, the humidity increases to keep unpackaged fruit, vegetables and salad products fresh and crisp for longer. Precision electronics carefully maintain the temperature at just above 0 °C, preventing any undesired freezing of the food, even at higher humidity levels.
When the vents are opened, the humidity falls, and the BioFresh-Safe becomes a DrySafe. This lower humidity is ideal for storing fish, meat, dairy products and dried fruit. When stored packaged in this comparatively dry climate, these foods retain their flavour for far longer than in a conventional refrigerator compartment – cheese, for example, keeps well for up to 100 days.
Incidentally: Temperatures of just over 0 °C are ideal for storing fresh food but are usually too cold for immediate consumption of the food. Cheese only develops its full flavour at room temperature, and fruit tastes better when it’s not too cold. Also, meat should be allowed to come up to room temperature before being cooked. Therefore store food in the refrigerator at a constantly cool temperature, but remove it well before eating or cooking it.
