The ideal temperature for each type of food
The interplay of the ideal humidity and the ideal temperature is key to lengthening storage life and protecting nutritional content. Different types of food have very different storage requirements, for example, high-quality ham matures in dried Alpine air, mangos grow at high humidity levels and cheese develops its flavour in cool caves. The storage conditions in the BioFresh drawers can be adjusted to provide the optimum storage climate for different types of food.
Customised food storage with BioFresh
Meat and dairy products
In terms of temperature and humidity, meat products are extremely demanding, and they are best stored in the BioFresh DrySafe. The DrySafe environment, with low humidity and a temperature of just above freezing, significantly reduces the activity of micro-organisms, which greatly extends the storage life of meat products. This environment is also perfected suited to storing milk, cheese and yogurt.
Fruit and vegetables
The high water content of fruit and vegetables means that they need to be stored at a high humidity level. The BioFresh HydroSafe creates an ideal climate for fruit and vegetables, with precise electronic controls maintaining a constant temperature of just over 0°C. These optimum storage conditions not only prevent the food from freezing but also prevent it from drying out and, to a large extent, preserve the food's valuable nutritional content.
Retailers store fish and seafood on ice, and for good reason: their ideal storage temperature is at freezing point. Constant, uniform low temperatures are essential and, with a maintained ambient temperature of just above 0°C, the BioFresh safe is ideal for storing fish. In combination with the DrySafe setting, refrigerated fish and prawns will stay fresh for much longer.
